So I've thought of tinkering with Arduino before, but the price always seemed a little much for me to start with, these look cool! But there is a lot of stuff to choose from, what should I go for if I am just starting out?

if you are just starting out, I\'d recommend getting two digisparks and one of each shield kit. That will give you a lot of options for tinkering.
